Sweet Potato Toast

Hells yea!  Sorry...okay if you look at the internet, sweet potato toast is all the rage!  A new friend of mine, who I met at the Woodstock Fruit Festival, posted a story on her page and I had to try it!  It is simple enough!  One ingredient.

INGREDIENTS:

Sweet potato 

Utensils:

A Toaster

Silicone tipped thongs (or unplug the toaster before putting thongs in).

Step 1:

Rinse off your sweet potato.

Step 2:

Cut the potato in about 3/8 inch lengthwise slices.  Some people brush it lightly with oil.  I don't think that is necessary.  Again this is a personal preference.  If you normally eat it with oil and would like to try it without, dress it with juicy items, like tomatoes and lettuce!

Step 3:

Pop in the toaster (if you have a toaster oven, this may work easier - you will see below, that I lost one!).  Each toaster is going to be different.  You will have to figure out the right amount of time for  the thickness of slice vs. your toaster and heat setting.  I had it on the darkest setting and toasted it 4 times.  As you will see 4 was a bit too much.  It is ready when it feels soft as you pierce it with a fork.

Step 4:

I dressed it with a few shreds of Romaine Lettuce, a small slice of tomato and a dollop of Chipotle Guacamole!
