Spicy Tamari-Ginger Sauce

Ingredients:

1/4c. Olive Oil

1 tsp, Spicy Sesame Oil

1/3 c. Rice Vinegar

2 Tbsp. Tamari Sauce

1 Lime (fresh squeezed)

2 Tbsp. Maple Syrup

1 Tbsp. Sesame Seeds (optional)

1  1/2 Tbsp. Fresh Ginger (I only had powdered - and threw in a little fresh grated turmeric)

1 Fresh Chopped Green Onion (I didn't have so I used 1/2 shallot can use red or yellow onion too)

Pepper (to taste)

Salt (1/2 tsp - or to taste)

 

Instructions:

1. Other than the oils, combined all liquids together in a separate bowl.

2. Whisk the oils together in a separate small bowl.  

3. Gradually add the liquids into the oil while still whisking.

4. Stir in the solids.

5. Set aside.

 

Spring Rolls

Ingredients: 

Julienne 1 carrot

Julienne 1/2 red bell pepper

a few handfuls of spiralized red beets

1/4 thinly sliced red onion

1/2 c. Fresh Cilantro

a few handfuls of fresh Arugula

 

 
 

Don't wet these, until you are ready to use them.  Wet one in drinking water, it will soften quite quickly.  Add veggies on top and wrap like a burrito.

 
 
 

Then fold the edges over on the top.

Throw all of the veggies into a bowl.

 
 
 
 
 

I was out of cilantro, but this worked out great!

Fold the edges over on the bottom.

Drizzle with sauce & eat!
